Easy Strawberry Frosting
Serves 24
This Easy Strawberry Frosting is light and creamy, and it's the perfect compliment to your favorite chocolate, vanilla, or banana cupcakes!

Ingredients

  • 4oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 1/4 teaspoon strawberry extract
  • 4 tablespoons Nestle Strawberry Quick
  • 2 tablespoons cream

Directions

Step 1
In a small bowl dissolve Strawberry Quick into the cream, set aside.
Step 2
In a mixing bowl beat the cream cheese and butter until very light and creamy - at least 2-3 minutes. Add in the powdered sugar and strawberry extract, and half of the cream mixture. Beat on low until combined, then on high until light and fluffy. If too thick, add remaining cream.
Step 3
Pipe or spread onto cooled cupcakes. Store covered in the refrigerator.

Nestle Strawberry Quick is not a product I would buy or use for anything else. Do you think I could substitute dry strawberry Jell-O mix?

I have tried this before…the taste is much stronger so don’t use the whole package. I would start with 2 tsp and go from there. The color will also be much brighter. Let me know how it goes 🙂

You probably won’t need to add any cream because of the juice from the berries. Let me know how you like it!
