Brown Butter Butternut Squash Soup

Brown Butter Butternut Squash Soup
Serves 4-6
Brown Butter Butternut Squash Soup is the perfect fall comfort food. This easy soup recipe comes together fast and is great with warm bread on busy weekdays!

Ingredients

  • 1 Large butternut squash (roasted until soft)
  • 1/4 cup brown butter
  • 2 cups chicken stock
  • 1 cup whole milk
  • dash nutmeg
  • salt and pepper (to taste)

Directions

Step 1
In a food processor puree the roasted squash with the milk until smooth. Set aside.
Step 2
In a saucepan over medium heat, cook the butter until foamy and a deep golden brown. Stir in the squash, chicken stock, nutmeg, and salt and pepper until creamy and hot.
Garnish with sour cream if desired.

    The receipe states to cook the butter does not tell you. How much ?.

      The recipe calls for 1/4 cup of butter. Hope you enjoy the soup! 🙂

    I have to admit that I have not had nor ever made butternut squash soup but now I’m going to! I made pumpkin soup for the first time last weekend and loved it so I bet we will love this too!

    Oh this sounds so perfect for the weather we’re having here in Boston. While I love brown butter in desserts, there is just something extra special about the way it pairs with butternut squash.

    I’m a big butternut squash soup fan! This recipe looks creamy and perfect.
    One of my favorite cheats is to buy the pre-cut butternut at the grocery (more and more stores are selling it that way now) and then not have to deal with cutting it up!
