Brown Butter Butternut Squash Soup
Serves | 4-6 |
Brown Butter Butternut Squash Soup is the perfect fall comfort food. This easy soup recipe comes together fast and is great with warm bread on busy weekdays!
Ingredients
- 1 Large butternut squash (roasted until soft)
- 1/4 cup brown butter
- 2 cups chicken stock
- 1 cup whole milk
- dash nutmeg
- salt and pepper (to taste)
Directions
Step 1 | |
In a food processor puree the roasted squash with the milk until smooth. Set aside. | |
Step 2 | |
In a saucepan over medium heat, cook the butter until foamy and a deep golden brown. Stir in the squash, chicken stock, nutmeg, and salt and pepper until creamy and hot. Garnish with sour cream if desired. |
