Creamy Chicken Noodle Casserole

I love quick and easy dinners like this Creamy Chicken Noodle Casserole. It's a creamy, hearty version of one of the most loved soups of all time!
Ingredients
- 12oz spaghetti (cooked and drained)
- 1/2lb carrots (chopped)
- 2 stalks celery (chopped)
- 1 Small onion (finely chopped)
- 3 cups chicken (cooked and chopped)
- 1 can cream of chicken soup
- 2 cups chicken stock
- salt and pepper (to taste)
- 1 cup french fried onions
Directions
Step 1 | |
Saute the celery, carrots, and onion with a TBS of oil over medium heat until they start to soften (about 12 minutes). | |
Step 2 | |
In a large bowl stir together the veggies, chicken, spaghetti, soup, chicken stock, and salt and pepper. Pour into a greased 9x13" pan. Bake covered at 350* for 25 minutes. Uncover and top with french fried onions and bake 10 minutes more. |

I measured out 12 oz raw noodles then cooked them, is that correct? Also in the pic it looks like you cut the noodles? Or do you break them small before cooking?

Yes, that is correct. I broke the noodles before cooking mainly because it makes it easier to eat. This is totally optional. Enjoy!
