Creamsicle Muffins

Creamsicle Muffins
Serves 12
Prep time 20 minutes
Cook time 15 minutes
Total time 35 minutes
Creamsicle Muffins are a welcome treat for breakfast or brunch. They are light and fluffy with vibrant orange flavor, studded with white chocolate chips!

Ingredients

  • 1/4 cup unsalted butter, melted
  • 1/4 cup canola oil
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/3 cup plain Greek yogurt
  • 1/3 cup orange juice
  • zest of one orange
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups all purpose flour
  • 3/4 cups white chocolate chips

Directions

Step 1
Preheat oven to 350 and grease a 12 cavity muffin tin.
Step 2
IN a mixing bowl stir together the butter, oil, sugars, eggs, yogurt, orange juice and zest, and vanilla. Set aside.
Step 3
In a separate bowl whisk together flour, baking powder, and baking soda.
Add the dry ingredients to the wet, and stir gently until just combined. Stir in white chips.
Spoon into muffin tin filling 12 cavities 3/4 full.
Bake 13-15 minutes or until tester inserted into center muffin comes out clean.
Let cool in tins about 10 minutes before cooling completely on wire rack.
Store in a covered container.
