Chocolate Raspberry Cupcakes

Chocolate Raspberry Cupcakes

Chocolate Raspberry Cupcakes
Serves 20
Prep time 20 minutes
Cook time 14 minutes
Total time 34 minutes
Chocolate Raspberry Cupcakes are easy to make from scratch and the outcome is so impressive! Rich chocolate pairs perfectly with the bright, sweet raspberry!

Ingredients

  • raspberries for garnish

Cupcakes

  • 1/2 cup unsalted butter
  • 1/4 cup oil
  • 1 1/2 cup granulated sugar
  • 1 cup cocoa powder
  • 3 eggs
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 cup hot water
  • 1/4 cup pureed raspberries
  • 1 teaspoon raspberry extract
  • 1 2/3 cup all purpose flour
  • 1/2 cup milk

Frosting

  • 3/4 cups unsalted butter
  • 3/4 cups cocoa powder
  • 1/4 cup raspberry puree
  • 3 cups powdered sugar

Directions

Cupcakes
Step 1
In a mixing bowl beat the butter, oil, and sugar until light and fluffy. Add cocoa and the eggs, one at a time, mixing after each addition. Add half of the milk and half of the flour. Mix well. Add baking soda and salt, water, and raspberry puree and extract and mix again. Add remaining milk and flour and mix until well incorporated.
Step 2
Pour batter into lined cupcake pans about 3/4 full and bake for about 14 minutes, or until toothpick inserted into the center of the cupcakes comes out clean. Cool completely before frosting.
Frosting
Step 3
In a large bowl beat butter and cocoa powder until fluffy. Add powdered sugar and salt and beat again. Mix in raspberry puree. If the frosting is too thick, add more puree or some milk 1 TBS at a time.
Pipe or spread onto cupcakes.
Garnish with raspberry if desired.

    I’m always saving Chocolate and Raspberry recipes for my mom, she loves that flavor combo! I love that you used raspberry puree in the frosting! I haven’t seen anyone do that!

    I just in fact used raspberry extract for the first time myself in a new recipe I’ve got coming because my hubby hates the seeds form raspberry anything. I think cupcakes are way better than cake any day, perfect portion control!

    Oh yum! That frosting looks so good! Perfect little cupcake for Valentine’s day Plus raspberry and chocolate are one of the best pairings! I’ve found a couple old pictures myself and always wonder why I didn’t post them. Maybe one of these days!
