Caramel Coconut Chocolate Cake Mix Cookies

These are some of the easiest and most delicious cookies you can make! They are almost like a German chocolate cake in cookie form!  That gooey caramel filling is simply dreamy.

Chocolate Caramel Coconut Cookies

This is another winner of a recipe that I made years ago and forgot to share them here. I don’t know how I forgot about them – these cookies are incredible!!

When I stumbled upon these photos I nearly cried. You see that little girl? She’s 4 years old in this photo. Skip ahead to today and she’s SIX. Six, people! How does this happen? She is my first born and I feel like it’s a little unfair how fast time is flying. Does anyone have the secret to keeping little ones little? I’d really like to know.

Anyway. These cookies. Make them – trust me. You won’t be sorry!

Oh, gooey center of caramel…yes. Bonus: the husband doesn’t care for caramel, so no sharing! (good and bad problem, I guess)

Those cookies look yummy and there isn’t a way to keep our young ones young. My first child is 16 and I’m wondering the same. It was like yesterday we brought her home from the hospital and my youngest is 5. We just have to enjoy them. The cycle of life 🙂
