My kids are a little weird when it comes to dinner.
They don’t like delicious cheesy casseroles, but give them baked fish and asparagus and they are cheering!
All but one child will cringe if you offer them lasagna, but grilled chicken and veggies? Hooray!
I guess I shouldn’t complain. They like easy, healthy foods!
But, seriously. I have a child who doesn’t like melted cheese. MELTED CHEESE! Where have I gone wrong??
Anyway. This meal is simple, easy, and healthy – with no melted cheese in sight! The flavors are bright, sweet, sour, and just a little spicy (depending on your chili powder). It’s a winner for everyone 🙂

Chili Lime Chicken with Pineapple Avocado Salsa

Ingredients
- 1 tablespoon oil
chicken
- 4 Medium boneless, skinless chicken breasts (pounded to 1/2)
- 1/2 teaspoon sea salt
- 1 teaspoon garlic powder
- 1 1/2 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1 lime
salsa
- 1 cup chopped pineapple
- 1 cup chopped avocado
- 1/2 cup seeded, chopped tomato
- 1 lime (juice AND zest)
- 1/4 cup finely minced red onion
- sea salt (to taste)
- 1-2 tablespoon honey (if desired for extra sweetness)

Step 1 | |
Add all salsa ingredients (except honey) to a bowl and gently stir. If extra sweetness is desired, add honey to taste. Set aside. | |

Add salt, garlic, chili, and onion powders in a small bowl and mix together. Rub the chicken evenly with spices. | |
Step 3 | |
Add oil to a large skillet over medium/high heat. Place seasoned chicken in the pan and cook for 5 minutes. Flip chicken and drop heat to medium and cook another 5 minutes or until cooked through. Squeeze lime juice over chicken and top with salsa. |
