Chewy Peanut Butter Cinnamon Cookies
Soft and chewy, salty and sweet, these cookies are perfection! The addition of cinnamon chips make these perfect for the holidays!

Ingredients

  • 1 cup butter (softened)
  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 1/2 cups flour
  • 1 cup cinnamon chips
  • 1 cup chocolate chips

Directions

Step 1
Preheat oven to 350*
Step 2
In a large bowl cream together butter, peanut butter, and sugars until light and fluffy.
Step 3
Add in the eggs one at a time, mixing after each addition.
Step 4
Gradually add in the baking soda, baking powder, salt, and flour and mix until well combined but do not over mix. Stir in chips by hand.
Step 5
Drop by spoonfuls onto ungreased baking sheets. Bake for 6-8 minutes or until slightly golden on the edges. Cool on wire racks. Store in a sealed container at room temperature.

I am awful for missing these A) because I love you and I stalk your site like crazy, and B) because I LOVEEEE cinnamon and I happen to adore eating peanut butter toast with cinnamon sugar sprinkled on top. Cinnamon can do no wrong; I love the stuff and eat it on everything religiously. These cookies rock my socks!

Depends on the size you make them. I like to make mine a bit on the small side (that way I can eat more!) and I got about 4 dozen. Hope you enjoy them!
