Chewy Peanut Butter Cinnamon Cookies
Soft and chewy, salty and sweet, these cookies are perfection! The addition of cinnamon chips make these perfect for the holidays!
- 1 cup butter (softened)
- 1/2 cup peanut butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 1/2 cups flour
- 1 cup cinnamon chips
- 1 cup chocolate chips
|Preheat oven to 350*|
|In a large bowl cream together butter, peanut butter, and sugars until light and fluffy.|
|Add in the eggs one at a time, mixing after each addition.|
|Gradually add in the baking soda, baking powder, salt, and flour and mix until well combined but do not over mix. Stir in chips by hand.|
|Drop by spoonfuls onto ungreased baking sheets. Bake for 6-8 minutes or until slightly golden on the edges. Cool on wire racks. Store in a sealed container at room temperature.|

Love toast with pb and cinnamon/sugar on them! Absolutely love peanut butter cookies! Love baking with cinnamon chips!! Will definitely be trying these soon!!! Yum!!!

I am awful for missing these A) because I love you and I stalk your site like crazy, and B) because I LOVEEEE cinnamon and I happen to adore eating peanut butter toast with cinnamon sugar sprinkled on top. How many cookies dose this make?
Depends on the size you make them. I like to make mine a bit on the small side (that way I can eat more!) and I got about 4 dozen. Hope you enjoy them!
