Chewy Lemon Cookies

Chewy Lemon Cookies

These Chewy Lemon Cookies are downright irresistible! Light and chewy, with a punch of lemon and sweet white chocolate chips. Your new favorite cookie!

Ingredients

  • 3/4 cups unsalted butter (softened)
  • 1 1/2 cup granulated sugar
  • 2 1/2 tablespoons lemon juice
  • 1 egg
  • 1/4 teaspoon salt
  • 1 teaspoon lemon extract (or vanilla)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 1/4 cups all purpose flour
  • 1 1/2 cup white chocolate chips

Directions

Step 1
Preheat oven to 350.
In a mixing bowl cream the butter and sugar. Add the lemon juice, egg, lemon extract, and salt and mix well. Mix in baking powder and baking soda. Add flour and mix until combined. Stir in white chips.
Step 2
Drop by 2 TBS scoops onto a silicone baking mat or parchment lined baking sheet 2" apart. Bake 8-10 minutes or until barely golden on the edges. Let sit on baking sheet for a few minutes before transferring to a cooling rack. Store in an airtight container.

    What if I don’t have a silicone baking mat or parchment paper or wax paper, will my cookies still be soft?

    Lemony desserts are my favorite when the weather turns warm. These cookies are something I’ll need to try. They look great, and I love the pale color with the white chocolate chips.

    I love that you made these lemon cookies from scratch! While I don’t necessarily have a problem with boxed mixes, there’s something so satisfying about a cookie that you made from start to finish… and these ones? Gorgeous. Seriously. I can envision them being devoured during the summer months here because they’re light and fresh and the kind of dessert you want to eat during the hot months. I cannot wait to make these!
