I’m sorry, but I am ready for all things Christmas!
It feels like it’s way too soon to be talking about Christmas, but that’s just because this year flew by!
But let’s face it, Christmas is next month and now is the time to start baking and stocking your freezer with lots of goodies.
Then when friends and family show up at your door in the midst of all of the holiday craziness, you will have plenty of festive treats to offer to them, like these heavenly Chewy Dark Chocolate Cranberry Cookies !
Guys. It snowed last week.
My kids were all giddy and excited, and my 3 year old kept asking if it was Christmas.
Never mind we don’t even have our trees up yet.
Never mind it was just a dusting of snow that all melted before noon.
To them, it was magical. And I love that.

Baking with a 2 and 3 year old is so much fun. We laughed so hard, and have since played the video a million times because none of us can get enough of it. SO cute!
These cookies came out even better than I imagined.
I love the combination of tart, chewy cranberries with smooth rich dark chocolate, and a hint of almond flavor.
For a little extra flair, I sprinkled the tops with Madagascar Bourbon Pure Vanilla Sugar just before baking. The flavor is amazing and I love the extra sparkle it gives these cookies!

Chewy Dark Chocolate Cranberry Cookies

Ingredients
- 1 cup unsalted butter (softened)
- 1 cup brown sugar
- 3/4 cups granulated sugar
- 1 teaspoon salt
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 2 eggs
- 1 1/2 teaspoon baking soda
- 2 1/2 cups all purpose flour
- 6oz semi sweet chocolate bar (finely chopped)
- 1 1/2 cup dark chocolate chips
- 1 cup dried cranberries
Directions

Preheat oven to 350 In a large mixing bowl, cream the butter and sugars. Add salt, vanilla and almond extracts, and eggs, mixing well. Add baking soda and flour and mix until combined. Stir in chocolate and cranberries. | |
Step 2 | |
Drop by rounded 2TBS scoops onto a parchment or silpat lined baking sheet about 2" apart. Bake 9-10 minutes or until golden around the edges. Allow to cool on the baking sheet a few minutes before transferring to a wire rack to cool completely. Once cooled, you can freeze the cookies or store in an airtight container. |
