Boston Cream Pie Parfaits from Scratch

Boston Cream Pie Parfaits from Scratch
Serves 10
Making Boston Cream Pie Parfaits from Scratch isn't a hard as you may think. This is a recipe I've made for my family for years, and it's always a favorite!

Ingredients

Cake

  • 1/2 cups unsalted butter
  • 1/4 cups canola oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 1/2 cups milk
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 2 cups granulated sugar
  • 2 1/2 cups all purpose flour

Custard

  • 2/3 cups granulated sugar
  • 4 tablespoons corn starch
  • 1/4 teaspoons salt
  • 3 cups milk
  • 4 egg yolks
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract

Ganache

  • 2 cups chocolate
  • 3/4 cups cream or whole milk

Directions

Cake
Step 1
Preheat oven to 350
In a mixing bowl combine all cake ingredients on low speed, then beat on high for 3 minutes. Pour into a greased 9x13" baking pan and bake about 35 minutes or until a tester comes out clean. Let cool.
Custard
Step 2
In a large sauce pan stir together all custard ingredients except vanilla and almond extracts over medium heat. Continue stirring and bring to a boil. Let boil for one minute. Remove from heat and stir in vanilla and almond extracts. Let cool.
Step 3
In a glass bowl heat the milk or cream in the microwave for 90 seconds, or until it's simmering. Pout in chocolate and let it sit for 2 minutes. After 2 minutes, stir until smooth. Let cool slightly.
Step 4
Once everything has cooled, cut the cake into cubes and start assembling the parfaits. Layer cake, custard, and ganache, and repeat until parfait glasses are filled, ending with ganache. Chill until ready to serve.

    I absolutely love Boston cream pie. I think it’s the custard mixed with chocolate that does it. This version is so fun!

    I love Boston cream pie! There’s something about the combination of ganache + spongey cake + pastry cream that you just can’t beat. Of course it would taste delicious as a parfait, why didn’t I think of that? 🙂
