30 Minute Mexican Soup

Ingredients
- 1 medium onion (chopped)
- 4 cups chicken (cooked and chopped)
- 2 cans refried beans
- 1 can corn
- 1 can black beans
- 1 1/2 cup salsa
- 2 cups chicken stock
- 1/4 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
Directions

In a large soup pot cook onion in a TBS oil for about 7 minutes over medium heat. Add all remaining ingredients stirring well. Continue cooking over medium heat about 20 minutes, stirring often. Serve with sour cream, shredded cheese, and tortilla chips if desired - though it's excellent all on it's own! |

Saw this on Pinterest and made it tonight to rave reviews from my guys. I skipped the chicken, so it only took me about ten minutes from start to finish. It had a great balance of flavors without being overly spicy, though that could easily be adjusted if you want. We had green onions on top with sour cream and cheddar on the side and tortilla chips with guacamole. Thanks so much for such a yummy recipe!
