These bars are one of the best desserts ever. My whole family loves them and I know you will too – even if (like me) you don’t love butterscotch. They are rich and gooey, and loaded with chocolate chips. These Gooey Butterscotch Chocolate Chip Bars are sure to satisfy that sweet tooth!
I’ve only cooked/baked a handful of things since becoming pregnant. By the way, 17 weeks now! Yippee!!!! I still feel like I’m stuck in the stage of just looking fatter but not exactly pregnant. Oh well, I’m too happy to care too much about that 🙂
Anyway, I am always sick and the smell of the oven just being on kind of repulses me. It’s tough kids. My poor husband and children have not had a decent home cooked meal in months. But I did manage to make these Gooey Butterscotch Chocolate Chip Bars, and I think that reminded them that I still love them, haha!
I don’t normally like nuts in my food, but I might try these with some salted pecans next time. I think the salty and sweet would make them even better (if that’s possible).

Gooey Butterscotch Chocolate Chip Bars

Ingredients
- 1/2 cup butter
- 12oz butterscotch chips
- 1/2 cup brown sugar
- 2 eggs
- 1 1/2 cup flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 heaped teaspoons vanilla
- 2 cups chocolate chips
- 2 cups mini marshmallows
Directions

Preheat oven to 350 In a medium saucepan melt the butter, brown sugar and butterscotch chips over medium heat, stirring constantly. Once melted and smooth, remove from heat an stir in eggs, flour, baking powder, salt, and vanilla. Let the mixture cool completely before moving on. | |
Step 2 | |
Once mixture is cool stir in chocolate chips and marshmallows. Spread into a greased 9x13" pan and bake for 25 minutes. Let cool before cutting. Store covered at room temperature. |
