I have been using my crock pot a lot lately, I am so thankful for those things! Sure makes dinner time easier for me!

I love making soups in the crock pot because it gives the flavor of a soup that’s been cooking all day, without having to leave the stove on for several hours. Plus your house will smell delicious :)

do you shred the chicken once it’s cooked, or cut it up beforehand? thanks!

That huuuuuge, delectable pile of shredded cheese on top is screaming my name :) as well as big ol’ hunks of avocado as a garnish! I am in love with this soup, girlie! So flavorful and perfect for a chilly January evening when I don’t feel like cooking (which is, uh, every evening) :)

I thought it had lots of Mexican flavor, but my family likes a heartier (thicker) soup.

Update – I have seriously made this soup at least 30 times. I LOVE IT!!!!!! Great way to get protein in a yummy way! I use Tastefully Simple “Onion Onion” and “Garlic Garlic” though… and I also add a can of black beans. It is the best and easiest and healthiest crock pot recipe by far! THANK YOU!!!!!!
