Healthy Slow Cooker Southwest Chicken Soup

I have one last healthy recipe for you before Skinny January comes to an end.  It’s like I took a plate of my favorite Mexican food and turned it into a fantastic bowl of soup!

This is one of those meals you will make over and over again; the kind of recipe that satisfies everyone.

*It’s healthy

*It’s super simple to make – just throw everything in the crock pot

*It’s full of different flavors and textures – very hearty

*It’s really, really yummy!!

I have been using my crock pot a lot lately, I am so thankful for those things! Sure makes dinner time easier for me!

I love making soups in the crock pot because it gives the flavor of a soup that’s been cooking all day, without having to leave the stove on for several hours. Plus your house will smell delicious 🙂

    This looks so yummy, but sorry I don’t understand: you put the chicken in raw, or cook it first?

        Update – I have seriously made this soup at least 30 times. I LOVE IT!!!!!! Great way to get protein in a yummy way! I use Tastefully Simple “Onion Onion” and “Garlic Garlic” though… and I also add a can of black beans. It is the best and easiest and healthiest crock pot recipe by far! THANK YOU!!!!!!

    That huuuuuge, delectable pile of shredded cheese on top is screaming my name 🙂 as well as big ol’ hunks of avocado as a garnish! I am in love with this soup, girlie! So flavorful and perfect for a chilly January evening when I don’t feel like cooking (which is, uh, every evening) 🙂
