Fluffernutter Bars

 

You know about fluffernutter sandwiches, right? Peanut butter and marshmallow fluff on white bread was a pretty popular lunch when I was a kid. I haven’t had one in years, but it was the inspiration for these gooey, chewy Fluffernutter Chocolate Chip Bars!

Chocolate doesn’t play a role in a traditional fluffernutter, but I had to add the chocolate chips, I mean, everything is better with chocolate! It was the perfect addition here.

Peanut butter and chocolate is a magical combination, and the marshmallows make these bars gooey and completely addicting!

 

These bars are like the softest, yummiest peanut butter cookie, loaded with chocolate chips, and made gooey and chewy from the mini mallows. I really love making cookie bars. They are so much easier and faster to make than cookies, and I love the thick, chewy texture.

Fluffernutter Chocolate Chip Bars

These Fluffernutter Chocolate Chip Bars are gooey, chewy, and completely irresistible! Peanut butter, marshmallows, and chocolate chips never tasted so good!

Ingredients
  

  • 1 cup unsalted butter softened
  • 3/4 cup creamy peanut butter
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 1/4 cup all purpose flour
  • 2 cup chocolate chips
  • 1 1/2 cup mini marshmallows

Instructions
 

  • Preheat oven to 350
  • In a mixing bowl cream together the butter, peanut butter, and sugars.
  • Add the eggs and mix again.
  • Gradually mix in salt, baking soda, and flour just until incorporated.
  • Gently mix in marshmallows and chocolate chips.
  • Spread into a greased 9x13" pan and bake for 20 minutes or until lightly browned on the edges. The center will jiggle slightly from the marshmallows but it will set after it cools - do not over bake.
  • Cool completely and cut into squares. Store in a tightly sealed container.

    Would it be possible to make these with marshmallow fluff instead of mini-marshmallows? These look super yummy, but I’m a vegetarian and marshmallows are not, but the fluff is. Just curious to if you or anyone else had tried it.

      Hi, Amanda! I have not tried it using fluff but I don’t see why it wouldn’t be yummy! What I would suggest doing is spread half of the dough in the pan then top with dollops of fluff, then cover with remaining cookie dough. Let me know if you try it 🙂
