Light and fluffy Lemon Cupcakes with Lemon Frosting made from scratch! They are so moist and bursting with flavor.

Ingredients
  

Cupcakes

  • 1/2 cup butter softened
  • 1/3 cup oil I use avocado oil
  • 2 cup granulated sugar
  • 1/2 cup lemon juice
  • 1/2 cup plain Greek yogurt or sour cream
  • 2 eggs
  • 1 tsp salt
  • 2 tsp vanilla extract
  • 2 tbsp corn starch
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 2 1/4 cup all purpose flour

Frosting

  • 1/2 cup butter softened
  • 2 1/2 cup powdered sugar
  • 1 tsp vanilla
  • 3-4 tbsp lemon juice

Instructions
 

Cupcakes

  • Preheat oven to 350
  • In a large mixing bowl cream together butter, oil, and sugar.
  • Then add remaining cake ingredients and beat on low until combined, then beat on medium for 1 minute.
  • Pour into prepared cupcake tins and bake 14 minutes or until done.
    Remove from tins and let cool completely before frosting.

Frosting

  • In a bowl beat together the butter, sugar, vanilla, and 2 TBS of lemon juice. If frosting is too thick, add more lemon juice, 1 tbsp at a time, and beat again until light and fluffy.
  • Spread or pipe onto cooled cupcakes. Immediately add sprinkles if desired.
