Chocolate Cranberry Toffee Cookies

- 1 cup unsalted butter softened
- 1 cup brown sugar packed
- 1/2 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 tsp baking soda
- 2 cup all purpose flour
- 1 cup old fashioned oats
- 1/2 cup dried cranberries
- 1 1/4 cup semi sweet chocolate chips
- 1 cup Heath baking bits
Preheat oven to 350
Cream together the butter and sugars until light and fluffy.
Add the egg, vanilla, and salt and mix well.
Add baking soda and flour and mix until combined.
Stir in oats, cranberries, chocolate chips, and Heath.
Drop by 2 TBS scoops about 2" apart on a silicone mat or parchment paper lined cookie sheet.
Bake 9-11 minutes. Allow to cool a few minutes on the cookie sheet before transferring to a cooling rack. Once completely cooled, store in an airtight container.
