Chewy Oatmeal Scotchies

- 1 cup unsalted butter softened
- 1 cup brown sugar packed
- 1/3 cup granulated sugar
- 2 eggs
- 1 tsp salt
- 1 tsp vanilla extract
- 1 1/2 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1 tsp baking soda
- 2 cup all purpose flour
- 2 1/2 cup old fashioned rolled oats
- 2 cup butterscotch chips
Preheat oven to 350
In a mixing bowl cream together butter and sugars.
Add salt, vanilla, and eggs and mix until smooth.
Add cinnamon, nutmeg, and baking soda, mixing well.
Gently mix in the flour until combined.
Add oats and butterscotch, mixing until incorporated.
Scoop by heaping tablespoons onto ungreased cookie sheets (I like to line mine with silicone baking mats) 2" apart.
Bake for 8-10 minutes and let cool on the sheet for a couple minutes before moving to a cooling rack. They will be soft until cooled. Store in an airtight container.
