Chewy Oatmeal Scotchies

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/3 cup granulated sugar
  • 2 eggs
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp baking soda
  • 2 cup all purpose flour
  • 2 1/2 cup old fashioned rolled oats
  • 2 cup butterscotch chips

Instructions
 

  • Preheat oven to 350
  • In a mixing bowl cream together butter and sugars.
  • Add salt, vanilla, and eggs and mix until smooth.
  • Add cinnamon, nutmeg, and baking soda, mixing well.
  • Gently mix in the flour until combined.
  • Add oats and butterscotch, mixing until incorporated.
  • Scoop by heaping tablespoons onto ungreased cookie sheets (I like to line mine with silicone baking mats) 2" apart.
  • Bake for 8-10 minutes and let cool on the sheet for a couple minutes before moving to a cooling rack. They will be soft until cooled.
    Store in an airtight container.
