Soft and Chewy Peanut Butter Toffee Cookies

- 3/4 cups unsalted butter (softened)
- 1/2 cup creamy peanut butter
- 2 tablespoons canola oil
- 1/2 cup granulated sugar
- 3/4 cups brown sugar (packed)
- 1 egg
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 2 1/2 cups all purpose flour
- 1 1/2 cup semi sweet chocolate chips
- 1 cup toffee bits
|Preheat oven to 350 |
In a mixing bowl cream the butter, peanut butter, oil, and sugars. Add egg and salt and mix again. Add baking soda and flour gradually until incorporated. Do not over mix. Stir in chips and toffee.
Drop by rounded teaspoons onto an ungreased cookie sheet 2" apart. Bake 6 minutes. Cool on wire racks and store in an airtight container.
