Soft and Chewy Oatmeal Cream Pie Bars

Soft and Chewy Oatmeal Cream Pie Bars

Soft and Chewy Oatmeal Cream Pie Bars
Serves 24
Homemade Soft and Chewy Oatmeal Cream Pie Bars are easy to make and taste better than anything you can buy in a package. Plus these have chocolate chips!

Ingredients

Bars

  • 3/4 cups unsalted butter (softened)
  • 2 tablespoons oil
  • 1/2 cup granulated sugar
  • 3/4 cups brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cup old fashioned oats
  • 1 1/2 cup all purpose flour
  • 1 1/2 cup semi sweet chocolate chips

Cream Filling

  • 1/2 cup unsalted butter
  • 2 cups powdered sugar
  • dash salt
  • 1 teaspoon vanilla
  • 2-4 tablespoons milk

Directions

Bars
Step 1
Preheat oven to 350
In a large mixing bowl cream the butter, oil, and sugars until light and fluffy. Add egg, vanilla, and salt and mix well. Add soda, oats, and flour just until incorporated. Stir in chocolate chips. Spread dough into a greased 9x13" pan. Bake for 15 minutes or until golden on the edges. Let cool completely.
Cream Filling
Step 2
In a mixing bowl, beat together butter, sugar, salt, vanilla, and 2 Tbs milk. If too thick add more milk 1 Tbs at a time until desired consistency is reached.
Step 3
Cut cooled bars into 24 squares, then cut each square in half, horizontally, as shown in the picture above. Spread a generous layer of cream onto half of the bars on the cut side. Top with remaining bars, cut side down. Store in a sealed container.

    These look beyond amazing! I loved oatmeal cream pies when I was a child, but my body can’t really handle processed foods. These homemade bars are the perfect solution. Pinned!
