Skinny Cherry Chocolate Peanut Butter Granola

Skinny Cherry Chocolate and Peanut Butter Granola

Skinny Cherry Chocolate and Peanut Butter Granola
Serves 6-8
Prep time 35 minutes

Decadent flavors of cherry, chocolate and peanut butter come together in this skinny granola you can feel good about eating!

Ingredients

  • 2 cups oats
  • 1/3 cup chia seeds
  • 2/3 cups dried cherries
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 3/4 teaspoons cinnamon
  • 1/4 cup dark chocolate chips

Directions

Step 1
Preheat oven to 325*
Step 2
Stir together oats, chia seeds, cherries, and cinnamon in a medium bowl. set aside.
Step 3
In a small bowl microwave peanut butter and honey until melted (about one minute). Stir and pour over oat mixture. Stir well until everything is evenly coated. Pour onto greased cookie sheet and press down so the mixture all sticks together in the pan. Bake 12 minutes then stir. Bake 10 more minutes and stir again. Bake 5 more minutes and remove from oven. Sprinkle with chocolate chips and let cool. Store in a sealed container at room temperature.

    Hey, thank you for the recipe!!! I have made this twice, the second adding a bit of vannila to the PB/honey mixture and can’t decide which is better. Do you think is a good substitute for the peanut butter? My friends got a daughter who is allergic and I wanted to bring this around for treat as my kids (and others) gobble it up. There is soy but butter but what about sunflower seed butter? If you have any suggestions, I would appreciate them. Thanks.

      I’m so glad you enjoy this recipe!! I have not tried it with anything but peanut butter, but I’m sure any butter would work just fine. Even cookie butter like Biscoff!

    How many calories do you think are in a serving of this? Or I guess the whole recipe & broken down into servings?

      There are about 160 calories in each 1/4 cup serving. I probably only used about 2 Tbs on my yogurt though and it was plenty! Enjoy!

    Oh my goodness, this granola looks out of this world INSANE, Stephanie! I heart granola and eat it every single morning.. but mine isn’t nearly as delicious and indulgent as this! Chocolate, peanut butter and cherries? Sign me up. I want this on my yogurt tomorrow AM!
