Salted Caramel Chocolate Cupcakes

Salted Caramel Chocolate Cupcakes

Salted Caramel Chocolate Cupcakes
Serves 20
Prep time 20 minutes
Cook time 15 minutes
Total time 35 minutes
These homemade Salted Caramel Chocolate Cupcakes are moist and fluffy with rich,creamy chocolate frosting and a generous drizzle of dreamy salted caramel!

Ingredients

Cupcakes

  • 1 1/2 cup all purpose flour
  • 1 cup cocoa powder
  • 1 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 cup hot water
  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract

Caramel

  • 1/3 cup caramel sauce
  • 1 teaspoon coarse sea salt

Frosting

  • 3/4 cups unsalted butter (softened)
  • 3/4 cups cocoa powder
  • 3 cups powdered sugar
  • pinch salt
  • 3-5 tablespoons milk or cream

Directions

Cupcakes
Step 1
Preheat oven to 350
In a medium bowl whisk together dry ingredients and set aside.
In a large bowl whisk together wet ingredients until well blended. Gradually add the dry to the wet ingredients and mix until well combined.
Pour into prepared cupcake liners and fill 2/3 full. Bake 13-15 minutes or until tester comes out clean. Let cool about 5 minutes before moving cupcakes to the counter to cool completely.
Frosting
Step 2
In a mixing bowl beat together the butter, cocoa, powdered sugar, salt, and 3 TBS of cream. Start mixing on low and once the ingredients are incorporated turn mixer to high until light and creamy. Add more cream 1 TBS at a time if necessary until desired consistency is reached.
Pipe or spread onto cooled cupcakes.
Caramel
Step 3
Stir together caramel sauce and salt. Drizzle over frosted cupcakes and sprinkle with additional sea salt if desired.
