Loaded Baked Potato Soup

Loaded Baked Potato Soup
Serves 4
Prep time 5 minutes
Cook time 15 minutes
Total time 20 minutes
2 Tbsp. each bacon and cheese, and 1 Tbsp. onions for topping. Stir remaining bacon, cheese and onions into soup.

Ingredients

  • 1lb potatoes (peeled and cubed)
  • 14oz chicken broth
  • 1 cup milk
  • 3 medium slices OSCAR MAYER Bacon (cooked and crumbled)
  • 1 cup KRAFT Shredded Cheddar Cheese
  • 1 green onion (sliced)
  • 1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

Directions

Step 1
Microwave potatoes in large glass bowl on HIGH 5 min., stirring halfway through. Stir in broth and milk. Microwave 10 min., stirring halfway through. Carefully smash some of the potatoes with potato masher.
Step 2
Reserve 2 Tbsp. each bacon and cheese, and 1 Tbsp. onions for topping. Stir remaining bacon, cheese and onions into soup.
Step 3
Top with sour cream and remaining green onions, cheese, and bacon.

    Wow Stephanie! What an amazing soup! With simple ingredients, easy to follow and so delicious!:) We live in Greece and we don’t have sour cream here, can we substitute with Greek yogurt? Does that sound correct?
