Lime Cheesecake Bars with Lemon Lime Crust
Lime Cheesecake Bars with Lemon Lime Crust make a fantastic summer dessert! Creamy lime cheesecake is cool and refreshing - perfect for potlucks or picnics.
- green food coloring (optional)
- 1/2 cup unsalted butter
- 1 1/4 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- zest of one lime
- 1/2 teaspoon baking powder
- 1 1/2 cup all purpose flour
- 24oz cream cheese (softened)
- 1 cup granulated sugar
- 1 egg
- 1/3 cup sour cream
- 5 tablespoons lime juice + zest of one lime
|Preheat oven to 350 |
In a mixing bowl, cream the butter and sugar until light and fluffy.
Mix in the egg, vanilla, salt, lemon juice, and lime zest.
Add baking powder and flour and mix until combined.
Spread into a greased 9x13" and and refrigerate while making the cheesecake batter.

Add food coloring (if desired) until the shade of green is to your liking. Mix well.
Add egg and sour cream and mix on low until combined.
Add lime juice and zest and mix to until incorporated.
Carefully pour evenly over crust. Bake 35-40 minutes or until cheesecake is mostly set but still jiggly. Let cool completely, then cover and chill at least 4 hours before serving.
If desired, sprinkle with lime zest or decorate with whipped cream and lime slices.
