This has become my go-to muffin recipe! All five of my kids love these muffins, and I love that they are healthy! They are fantastic for an easy grab-and-go breakfast, or a perfectly portable snack! You will be amazed by how scrumptious a guilt free muffin can be!
I realize that chocolate chips aren’t exactly health food, but it’s just a small amount divided between 12 muffins, so it’s not so bad. Or, you can totally leave them out if you prefer! Maybe add in some walnuts or dried cranberries instead! These are easily customizable to your own personal tastes.
I have started doubling this recipe because my kids eat them so fast. I freeze half of the muffins, and when the others are gone, I just set them on the counter to thaw and they are ready to go in about an hour! Just make sure you’re blender/food processor is large enough if you plan to double the recipe. Otherwise, grind up the oats first, then move to a mixer when adding the other ingredients.

Healthy Banana Blender Muffins
Ingredients
- 2 cups old fashioned oats
- 3 Medium over ripe bananas (about 1 1/2 cups)
- 2 eggs
- 1 cup Greek yogurt (I use half plain and half vanilla)
- 3 tablespoons brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- pinch salt
- 1/2 cup chocolate chips
Directions

Preheat oven to 375 In a blender or food processor, grind the oats into a very fine powder. Add all remaining ingredients except chocolate chips and blend very well. Stir in chips. | |

Fill greased muffin tins almost to the top and bake about 15-17 minutes or until a tester instead into the center of a muffin comes out clean or with a few crumbs. Let cool in the tins about 15 minutes before removing and allowing to cool completely. Freezes well! |
