Frosted Candy Cane Mocha Cookies

Frosted Candy Cane Mocha Cookies

Frosted Candy Cane Mocha Cookies
Serves 36
These soft, chewy Frosted Candy Cane Mocha Cookies = love at first bite! These are sure to become a favorite for everyone and a new beloved Christmas cookie tradition!

Ingredients

Cookies

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1/2 cup cocoa powder
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 teaspoon peppermint extract
  • 2 tablespoons strong brewed coffee
  • 1 teaspoon baking soda
  • 2 tablespoons corn starch
  • 2 1/4 cups all purpose flour
  • 12oz semi sweet chocolate chips

Frosting

  • 1/2 cup unsalted butter (softened)
  • 1 teaspoon peppermint extract
  • 2 1/2 cups powdered sugar
  • 3-4 tablespoons cream (or milk)

Topping

  • 2 candy canes (crushed)

Directions

Cookies
Step 1
Preheat oven to 350
In a large mixing bowl cream together the butter and sugars. Add cocoa and mix well. Beat in eggs and add salt and peppermint until well blended. Mix in the coffee. Add the baking soda, corn starch, and flour and mix well. Stir in chocolate chips.
Drop by rounded spoonfuls 2" apart on a cookie sheet. Bake 8 minutes and let rest on the sheet for a few minutes before transferring onto cooling rack to cool completely.
Frosting
Step 2
In a mixing bowl beat together butter, peppermint, sugar, and 2 TBS cream until smooth and creamy. If too thick add another TBS of cream and beat until desired consistencey is reached. Once cookies are completely cooled pipe or spread frosting onto each cookie.
Topping
Step 3
Sprinkle candy cane bits on frosted cookies.
