Ahhh, beloved peanut butter strikes again.  I just can’t seem to stay away from the stuff! Today I’m sharing a recipe with you that would make Elvis proud. Peanut butter + banana in one glorious muffin. Make these at night for a quick grab and go breakfast or eat them for a mid afternoon pick me up. They are filling and melt in your mouth delicious!

Elvis Muffins
by: Back For Seconds
Makes 12 muffins

  • 1 1/4 cup flour
  • 1/2 sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 3 large very ripe bananas, mashed
  • 2 eggs
  • 1 1/2 tsp vanilla
Peanut Butter Glaze:
  • 3 Tbs melted peanut butter
  • 1 Tbs butter
  • 1 tsp vanilla
  • 1 1/3 cup powdered sugar
  • water
Preheat oven to 350*
Mix together dry ingredients in a bowl and set aside. Blend together bananas, butter, eggs, and vanilla until well combined. Gradually add in dry mixture until well blended. Bake in prepared muffin tins for about 20 or until toothpick inserted comes out clean.
To make the glaze:
Add first 4 ingredients to a bowl and beat well. Add in a small amount of water at a time until it is a good pouring consistency. Pour over muffins or dip muffin tops into glaze. Best if eaten within 2 days.

    When I saw these at Crazy for Crust, I was hoping and praying they were peanut butter-banana. I think I’m going to have an issue not putting that peanut butter glaze on EVERYTHING 😉
