Easy Chocolate Chip Macaroons Recipe

This Easy Chocolate Chip Macaroons Recipe is a must make for your Christmas cookie trays! They are light and chewy with a delightful chocolate twist!

These chocolate chip macaroons are one of my favorite cookies to make at Christmastime, and they are by far the easiest! (If you like lemon desserts, be sure to try these Easy Lemon Macaroons too!!)

All you need is three ingredients and about 20 minutes (including baking time!!) and there you have it! A delicious cookie that will have everyone going back for seconds!

These also freeze beautifully, so go ahead and make some now to have them ready for you on Christmas!

I love making a variety of Christmas cookies, candies, and fudge to give as gifts, bring to parties, and have ready for friends and family when they come to visit. But once out wins were born, it became clear that I could no longer go on a 48 hour baking spree just before Christmas to get them all done in time.

Now the we have six little ones, it’s even more important that I bake in advance!

I have made and tested tons of recipes to see which ones can be frozen and still taste amazing when thawed, and this is one of those recipes!

Besides being to quick and easy to make, these cookies taste fantastic too! They have a slight crunch on the outside, where the coconut has toasted, and the inside is gooey, chewy, and loaded with chocolate chips!

What could be better?

What is the difference between macaroons and macarons?

Macaroons, like today’s recipe, are coconut based drop cookies, while macarons are meringue based sandwich cookies.

How far in advance can I make macaroons?

You can make them a day or two in advance, stored in an airtight container, or they can be frozen up to 3 months!

What can I add to the macaroons instead of chocolate chips?

Feel free to add your favorite nuts (almonds would be delicious!), dried fruit, or favorite baking chips! If you want them plain, with just coconut, simply leave out the chips altogether.

Ingredients
  

  • 14 oz coconut
  • 14 oz sweetened condensed milk
  • 10 oz semi sweet chocolate chips

Instructions
 

  • Preheat oven to 325
  • In a large bowl, stir together the coconut, condensed milk, and chocolate chips until well combined.
  • Drop by rounded tablespoons 1" apart on a parchment or silicone mat lined cookie sheet.
  • Bake for 12-14 minutes or until edges are golden.
  • Allow cookies to cool completely before storing in a sealed container or freezing.

    These make a very sweet macaroon. I used dark chocolate chips to offset the sweetness. I think I could have used more coconut as well, maybe even some unswetened coconut, but that would remove the simplicity of opening and dumping 2 bags and a can. You cannot beat this for its simplicity. Also, some of the milk pooled around the macaroons and made a delightful caramel like layer. Overalk, we enjoyed these. I probably will try using some unsweetened coconut next time I make them.
