Easy Antipasto Salad

Easy Antipasto Salad
Serves 12
This Easy Antipasto Salad is bursting with Italian flavors and is perfect as an appetizer, side dish or light meal. You've got to make this!

Ingredients

  • 1lb rotini pasta (cooked, cooled, and drained)
  • 1 1/2 cup black olives (halved)
  • 1 cup artichoke hearts (quartered)
  • 8oz mozzarella cheese (cubed)
  • 8oz pepperoni (chopped)
  • 1 cup zucchini (chopped)
  • 1 cup parmesan cheese (grated)
  • 12oz italian dressing

Directions

Step 1
In a large bowl stir all the ingredients together. Top with extra parmesan if desired. Cover and chill at least 2 hours.

    I can’t eat the past since I’m gluten free but I love pepperoni, olives and cheese and be picking these off that pasta as fast as you can say cheese!
