Creamy Chicken Enchiladas
These Creamy Chicken Enchiladas are a family favorite! The chicken is made in the crock pot and couldn't be easier. These are seriously the BEST!
Ingredients
- 4 Medium boneless skinless chicken breasts
- 1 Medium onion (chopped)
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1 cup salsa
- 2 cups shredded cheddar (divided)
- 8oz cream cheese (softened)
- 1 can enchilada sauce
- 10-12 tortillas
Directions
Step 1 | |
Place chicken, onion, chili powder, cumin, garlic, and salsa in the crock pot. Cook on low for 6-8 hours. Once done, use two forks to shred the chicken. | |
Step 2 | |
Stir the cream cheese and 1 cup of shredded cheese into the hot chicken until cream cheese is melted. Scoop filling into 10-12 tortillas and roll them tightly. Place in a greased 9x13 pan and cover with enchilada sauce and remaining cheese. Bake at 375 for 20 minutes |

Yum!! These look amazing. I am going to make 1 for dinner and freeze 2! I am pregnant and need to start preparing frozen meals for when baby is here, like you mentioned. What would the cooking time be right out of the freezer or would you recommend thawing first? Thank you!!
