Creamy BBQ Bacon Potato Salad

Creamy BBQ Bacon Potato Salad
Serves 8-10
This cheesy, Creamy BBQ Bacon Potato Salad is the perfect side dish for summertime meals. This is the dish your cookouts, picnics, and parties need!

Ingredients

  • 8 Medium potatoes (peeled and diced)
  • 2 stalks celery (diced)
  • 1 1/2 cup shredded cheddar cheese
  • 6 medium slices cooked bacon (chopped)
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 3/4 cups plain Greek yogurt
  • 3/4 cups sweet BBQ sauce

Directions

Step 1
Boil the potatoes in a pot of water until tender. Drain and let cool.
Step 2
In a small bowl whisk together the salt, garlic, yogurt, and bbq sauce. Set aside.
Step 3
In a large bowl, gently stir together the potatoes, celery, most of the bacon, most of the cheese, and the sauce, until well coated. Sprinkle remaining cheese and bacon on top. Chill until ready to serve.

    Gonna try it with chicken instead of potatoes but the original version with potatoes still sounds great.

    I just made this potato salad for Father’s Day supper. Husband is traveling tomorrow. This is amazing. I added green onions, red bell pepper, a little extra celery, extra bacon, a little smoked paprika, and a little less cheese than the recipe called for. It is AMAZING. I am a potato salad junkie. My son said this was his favorite. Stephanie, I also love fashion, shopping, cookies for breakfast, and I have curly hair. I am thinking you are from the South. I am originally from the South.

    They’re crazy about potato salad here in Germany but it also looks so bland to me. This, though?! Oh my. This looks perfect! SO much better than the regular kind. 🙂
