Coconut Funfetti No Bake Cake

Coconut Funfetti No Bake Cake
Serves 9
Prep time 20 minutes
This 3 tiered coconut funfetti no bake cake is the perfect fake out recipe for spring!

Ingredients

Cake

  • 5 cups mini marshmallows
  • 3 tablespoons butter
  • 1 teaspoon coconut extract
  • 4 1/2 cups Cheerios
  • 3 tablespoons sprinkles

Topping

  • 3oz white chocolate (melted)
  • shredded sweetened coconut
  • sprinkles

Directions

Cake
Step 1
Line 3 ramekins: 2", 4 1/2", and 7" with parchment paper and grease well. Set aside.
Step 2
In a medium saucepan over low heat melt butter and marshmallows, stirring constantly. Remove from heat and stir in coconut extract. Add cheerios and sprinkles and stir together. Press into ramekins and let cool.
Topping
Step 3
Remove the largest layer and place it on a plate. Stack on the next smallest layer followed by the smallet. Gently press so they stick together. Melt the white chocolate and pour it over the cake with a spoon. Quickly decorate with coconut, sprinkles, and anything else you like!
Best if eaten within 24 hours. Tightly cover any leftovers.
