I’ve told you before that I’m not a huge breakfast person. I mean, I love breakfast foods, but I don’t seem to have the time to make a big breakfast every morning. And usually I’m not even hungry until I’ve been up for a few hours.
But every once in a while, I wake up motivated (and hungry), and decide to make my family really happy and whip up a delicious (albeit sugar laden) breakfast!

What could put some pep in your step and a smile on your face in the morning more than a tall stack of fluffy, chocolate pancakes, loaded with chocolate chips and marshmallows? What’s that? It’s missing something you say? Ahhhh yes….
…warm chocolate maple syrup. That’s my kind of breakfast!

Choco-Mallow Pancakes (with Cocoa Maple Syrup)

Pancakes
  • 3 cups biscuit mix
  • 1 egg
  • 2 cups milk
  • 2 Tbs brown sugar
  • 4 Tbs sugar
  • 2 tsp vanilla
  • 1/3 cup sour cream
  • 1/2 cup cocoa
  • chocolate chips
  • marshmallows
For the Syrup
  • maple syrup
  • chocolate sauce
In  large bowl whisk together biscuit mix, sugars, and cocoa. In a smaller bowl mix together the egg, milk, vanilla and sour cream. Add the wet ingredients to the dry and mix just until combined. Ladle spoonfuls onto a hot, buttered griddle and immediately sprinkle on chocolate chips and marshmallows. When bubbles form all over the pancakes flip them over to cook on the other side. In a small sauce pan pour equal parts maple syrup and chocolate syrup and heat through. Drizzle on pancakes and enjoy!

    Ok, those look totally and completely bad for me… Which I am sure equals delicious. Planning to use fair trade cocoa. Do you think wheat flour would work instead of the biscuit mix? Thanks!
