Stovetop Chicken Chili Casserole is fast, easy, inexpensive, and totally kid friendly! This 20 minute meal is so perfect for busy weeknight dinners!
Ingredients
- 3 cups chopped, cooked chicken
- 15 oz cans chili beans
- 4oz cream cheese
- 1 1/2 cup salsa
- 3 cups cooked rice
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon chili powder
- salt and pepper to taste
- shredded cheddar cheese
- tortilla chips
Directions

In a large pan, heat the chicken, chili beans, salsa, and cream cheese over medium heat. Stir occasionally until cream cheese is melted. Add rice and seasonings and stir and heat through. | |

Top each serving with cheese and chips, if desired. |

Thank you for sharing this recipe! I changed it up a bit to meet my family’s allergy requirements. I used 1 lb ground turkey (didn’t have chicken on hand), used soft goat cheese instead of cream cheese, switched beans to great northwest, used green salsa, added 1/4 tsp cayenne pepper, 1 tsp cummin and reduced chili powder to 1/2 tsp and used 1/2 tsp each salt and pepper. Served up with shredded manchego goat cheese and white tortilla chips. Huge hit with the family, definitely a new family favorite!
