School is in session again, and even though it’s still 90 degrees outside, my mind is starting to think of all things fall. Jackets, cute boots, and, obviously, comfort food! This cheesy stovetop casserole totally fits into that last category. Did I mention it’s ready in 20 minutes?!

This is another one of those recipes to have on hand, especially if you’re like me and are terrible at meal planning. I know, I know. I’m a food blogger who doesn’t meal plan. It’s sad but true. I keep telling myself I will do better and start planning our meals more than 20 minutes ahead of time, but so far it just hasn’t happened.

Cheesy Chicken Chili on the Stovetop!

Luckily this meal is made with ingredients I always have on hand, and can be ready in under 30 minutes. My kids were thrilled that I let them eat this with chips. It’s a rare treat for them 😉 Pretty much anything easy, cheesy, and quick gets the thumbs up from me.

So, if you’re a meal planner, go ahead and add this dinner to your menu! And if you’re not…well, you’re not alone!

    Thank you for sharing this recipe! I changed it up a bit to meet my family’s allergy requirements. I used 1 lb ground turkey (didn’t have chicken on hand), used soft goat cheese instead of cream cheese, switched beans to great northwest, used green salsa, added 1/4 tsp cayenne pepper, 1 tsp cummin and reduced chili powder to 1/2 tsp and used 1/2 tsp each salt and pepper. Served up with shredded manchego goat cheese and white tortilla chips. Huge hit with the family, definitely a new family favorite!

    I am so with you on the meal planning thing. I go in spurts. I’ll do really well planning meals for about a month, and then I have a month of cooking on the fly. This recipe will be perfect for those latter times. My boys would be thrilled if I let them eat it with chips. I think that I shall!
