This recipe for Brownie Snowballs is so fun and festive - and delicious! Add these to your holiday cookie trays this year and "wow" your friends and family!
- 4oz unsweetened Bakers Chocolate
- 1 cup butter
- 2 cups sugar
- 1/4 cup strong brewed coffee (I used Maxwell House)
- 4 eggs
- 1/2 teaspoon salt
- 1 1/2 cup flour
- 36 mini marshmallows (I used Jet Puffed)
- 14oz white chocolate
- 2 1/2 cups shredded coconut (I used Bakers)
|Preheat oven to 350 |
In a large bowl melt the bakers chocolate with butter in the microwave. Stir until smooth. Add coffee, sugar and eggs, one at a time, stirring after each addition. Add salt and flour and mix until combined. Pour batter into a greased 9x13" pan. Bake about 20 minutes or until a toothpick inserted in the center of the brownies comes out with fudgy crumbs. Let cool.
|Cut the brownies into 18 squares and cut off the edges. Slightly flatten each brownie and roll them into balls around 2 mini marshmallows. Set the balls on a cookie sheet and freeze for about 30 minutes.|
|Melt white chocolate according to package instructions and dip each brownie ball into the chocolate until well coated. Immediately roll in coconut. Set on a cookie sheet until the chocolate sets up. |
Store in a covered container.
