Brownie Snowballs

Brownie Snowballs

Brownie Snowballs
Serves 18
Cook time 20 minutes
This recipe for Brownie Snowballs is so fun and festive - and delicious! Add these to your holiday cookie trays this year and "wow" your friends and family!

Ingredients

  • 4oz unsweetened Bakers Chocolate
  • 1 cup butter
  • 2 cups sugar
  • 1/4 cup strong brewed coffee (I used Maxwell House)
  • 4 eggs
  • 1/2 teaspoon salt
  • 1 1/2 cup flour
  • 36 mini marshmallows (I used Jet Puffed)
  • 14oz white chocolate
  • 2 1/2 cups shredded coconut (I used Bakers)

Directions

Step 1
Preheat oven to 350
In a large bowl melt the bakers chocolate with butter in the microwave. Stir until smooth. Add coffee, sugar and eggs, one at a time, stirring after each addition. Add salt and flour and mix until combined. Pour batter into a greased 9x13" pan. Bake about 20 minutes or until a toothpick inserted in the center of the brownies comes out with fudgy crumbs. Let cool.
Step 2
Cut the brownies into 18 squares and cut off the edges. Slightly flatten each brownie and roll them into balls around 2 mini marshmallows. Set the balls on a cookie sheet and freeze for about 30 minutes.
Step 3
Melt white chocolate according to package instructions and dip each brownie ball into the chocolate until well coated. Immediately roll in coconut. Set on a cookie sheet until the chocolate sets up.
Store in a covered container.

    Thanks! This looks awesome! Do you have to use the coffee? Can you omit totally or is there something I can substitute?

      You can just leave it out alltogether. They will still tadte great! Enjoy!
