Birthday Cake Brownies

Birthday Cake Brownies

Cook time 22 minutes
Total time 37 minutes
Birthday Cake Brownies just might replace cake for your next birthday celebration. The BEST homemade brownies with creamy birthday cake frosting - amazing!

Ingredients

Brownies

  • 1 cup unsalted butter
  • 1 cup semi sweet chocolate chips
  • 1/2 cup dark cocoa powder
  • 1/2 cup cocoa powder
  • 2 cups sugar
  • 1/4 cup brown sugar
  • 3 eggs
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cup all purpose flour

Frosting

  • 1/2 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1/3 cup yellow cake mix
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons milk or cream
  • 1/4 cup rainbow sprinkles

Directions

Brownies
Step 1
Preheat oven to 350
In a large glass bowl, melt the butter and chocolate chips in the microwave, stirring every 30 seconds until smooth. Stir in sugars and cocoa powders until completely combined. Add eggs one at a time until incorporated. Add salt and vanilla and mix. Stir in flour just until combined. Spread batter evenly into greased 9x13" baking pan.
Bake for 22-24 minutes or until tester comes out clean or with fudgy crumbs. Allow to cool completely.
Frosting
Step 2
In a mixing bowl beat butter, sugar, cake mix, vanilla, and 2 tbs milk until smooth. If too thick add more milk 1 tbs at a time until desired consistency is reached. Stir in sprinkles. Spread over cooled brownies and top with extra sprinkles if desired. Cut into 24 bars.

    I just stumbled upon your website and this posting is the first thing I read on it. I’m an animator, first-time mom and a long time self-taught baking enthusiast. I love trying out goodies recipes, making changes to existing ones and creating brand new ones from scratch for my recipe box. I know I’m late, but many congratulations on your book. Hope it’s doing well. Loved reading all that went into making it – very inspiring. My goodness, four kids with everything else – you’re Super Mom. I too was extremely sick during my pregnancy and had lost a lot of weight. Anyway. I’m definitely getting your book. Thank you for sharing this recipe – and others – with us 🙂

    For the frosting, could you use funfetti cake mix instead of yellow cake mix?

    Dearest Stephanie,
    What a great time for you and your children. I wish I had all those little ones at home and all cooking in the kitchen. To me there would be few things better than a bunch of kids at your feet while baking. The cookbook looks fabulous and I bet all of the recipes are out of this world.     Could I omit the dark cocoa and just use 1 C. cocoa? I dont have any of the dark on hand.. Thanks! Im going to be making these for my sons birthday treat for school since he requested brownies. These look amazing!!
