Banana Brownies with Peanut Butter Fudge Frosting

Frosted Banana Fudge Brownies are a decadent use for overripe bananas. Chocolate banana brownies are topped with a creamy peanut butter chocolate frosting!
Ingredients
Brownies
- 3/4 cups unsalted butter
- 1 cup semi sweet chocolate chips
- 2/3 cups cocoa powder
- 2 cups granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 cup overripe mashed banana (about 2 med/large bananas)
- 4 eggs
- 1 1/4 cup flour
- 1 cup semi sweet chocolate chips
Frosting
- 1/2 cup salted butter (softened)
- 1/4 cup creamy peanut butter
- 2/3 cups cocoa powder
- 2 cups powdered sugar
- 1/4 cup cream or milk

Preheat oven to 350 In a glass mixing bowl, heat butter and chocolate chips in the microwave in 30 second bursts, stirring each time, until melted and smooth. Whisk in cocoa powder. Stir in sugar, salt, vanilla, and mashed bananas. Add eggs, one at a time, stirring after each addition. Gently stir in flour until combined. Stir in chocolate chips. Spread batter evenly into a greased 9x13" pan. Bake 20-25 minutes or until a toothpick inserted into the center comes out with fudgy crumbs. (Do not over bake or brownies with be dry.) Let cool completely before frosting. | |

In a mixing bowl, cream together the butter and peanut butter until light and creamy. Add cocoa and powdered sugar and half of the cream or milk, and beat very well. If too thick, add more milk until desired consistency is reached. Beat until light and fluffy. Spread over cooled brownies. |
