Awesome Spinach Artichoke Dip

Healthy Spinach Artichoke Dip - This dip is our favorite! @backforseconds #spinachdip #artichokedip #healthy

I’m not big on eating huge meals. I am more of a snacker.
Sometimes we eat this spinach and artichoke dip for dinner. Actually, I think every time I make this we have it for dinner. It covers all your basic food groups, and if you dip celery or other veggies it’s actually really healthy.  (This is a great way to get some green veggies into your kiddos too – they will love this!)
Usually we eat it with chips though…shhhh 🙂
This would also be terrific for a party. Everyone loves a good dip, right?
So grab your favorite dippers and get cookin!

Awesome Spinach and Artichoke Dip
by Back For Seconds

  • 4 cloves garlic  chopped
  • 1 medium onion chopped
  • 10 oz frozen spinach cooked and drained
  • 1 jar artichokes roughly chopped
  • 1/4 cup mayonnaise
  • 1/2 cup sour cream
  • 6 oz cream cheese
  • 3/4 cup mozzarella cheese
  • salt to taste
  • 1/4 cup parmesan cheese
Preheat oven to 375*
Saute garlic and onions until soft. Pulse in a food processor. Add spinach, mayo, sour cream, cream cheese and salt and blend together well. Stir in mozzarella and artichokes and spoon into a greased 8″ dish.  Bake for 20 minutes. Sprinkle with parmesan. Serve hot.

    This is similar to a recipe that I make, but I love that you cooked the onions and put everything in a food processor! A lot easier to dip. Thanks for sharing at Simply Klassic.
