If you are looking for a creamy, comforting soup that is not only delicious, but healthy…look no further! This Creamy Potato and Veggie Chowder is a healthy, hearty meal you will make again and again!
Soups and chowders are my favorite meals when the weather turns cold. There is something so comforting about a hot bowl of homemade soup, right?
This recipe is awesome because it’s not only delicious, but it’s pretty healthy too! And it’s made in the crock pot!! Triple win!
I was a little worried when I made this chowder that my husband would complain about the lack of meat. To my surprise, he didn’t even notice! He ate 3 bowls in one sitting and all my kids had second helpings. I’m pretty sure that means they liked it, This chowder will be made quite often 🙂
This is a hearty soup – don’t think because it’s all veggies that it won’t be satisfying! It is thick and creamy and really hits the spot on those brisk, windy nights.
Make a pot for your family this week!
And here’s a quick peek into my life right now: I have entered the 3rd trimester! SO excited to meet this new little one!!!

Mjne still seems to be on the runny side, not thick. Any hints or suggestions?

Hi
I am Vegetarian and would love to try this soup, can you suggest what I substitute the chicken broth and chicken soup with please?
thank Nicky in England
Stephanie Brubaker says
Hi! You can use vegetable stock and cream of celery soup instead. It will be equally delicious! Enjoy!
Nicky Westwood says
Thank you Stephanie, are you saying use two cans of celery soup? thanks Nicky
Stephanie Brubaker says
Yes, or you could use one can cream of celery and one can cream of potato. Let me know how you like it, Nicky!
Nicky Westwood says
Fab thank you Stephanie – I will x
Kelli says
This looks yummy and am planning on making it this week! Does it freeze well??
Stephanie says
Thanks, Kelli! I have tried freezing it and I don’t really recommend it unfortunately. The potatoes get a little mushy after thawing and reheating 🙁 I hope you do make it though – it’s one of our favorites!
MoKyFellow says
Hey Kelli, you should do what I do. I cook stuff to “Eat” not to “Freeze”.

Evelyn says
Wonderful recipe! But I’m not a huge fan of celery. If I use the chopped celery in this soup and substitute cream of mushroom soup, will that work?
Stephanie says
Absolutely! I hope you enjoy it as much as we did! 🙂
