I have two one year olds and a four year old, and they love pancakes. They eat them at least 3 times a week for breakfast – we have a lot of fun playing with different kinds of pancake flavors!
I decided to try my hand at making my own homemade pancake mix last summer, and I haven’t turned back since. It’s so easy!
I mix up a huge batch of this easy homemade instant pancake mix just once every few months, and then I whip up a big batch of pancakes in the flavor of the day (just wait until you see my next post…*gasp!*). It’s so inexpensive and convenient, and unlike the store bought variety, when you make your own, you get to pick what goes into the mix. These can easily be made whole wheat too! 🙂
Throw in fresh or frozen fruit, chocolate chips, purees… experimenting is half the fun!
Whatever pancakes don’t get eaten that day, I lay out on a cookie sheet and freeze. Then I throw them in a ziplock bag and all I have to do is pop them in the toaster for a quick breakfast anytime my kids want them. Easy peasy!

Yes! The sour cream does add a nice fluffiness to the pancakes though 🙂

Thanks for the recipe. I was able to add powdered eggs, cinnamon, milk and sour cream so I can dry seal them in a jar. This is great! All I have to do is add water:) whoop hoooo:)

This recipe is soooo nice! I really like the idea of always having a “dry mix” ready anytime so that you just have to make the “wet mix” . I’ve just made one batch of this and my husband ate like 3/4 of the pancakes 🙂
For the wet ingredients i mix them quit a lot, like 5-7min so that I have many bubbles to be sure my pancakes will be fluffy. The sour cream is really a plus that gives the pancakes a soft taste.

Can I substitute Greek yogurt for the sour cream? I just hate to ask about a substitution when you have a really good, well thought out recipe.

Hi, Susan! I have not tried that substitution in this recipe, but it works as a great substitute in most recipes. I say, give it a try! 🙂

We love this recipe!! The flavors are wonderful. My only wish is that they were a little fluffier. These always turn out pretty flat, even when I’m careful not to overmix, and let the batter sit without re-stirring. Any ideas on how I might get a little more “rise” out of these otherwise wonderful hot cakes? 😉

I’m glad to hear you love this recipe, Andria! As far as getting fluffier pancakes, make sure you really beat the wet ingredients together well. You want to incorporate lots of air into the mixture – that will make the pancakes light and fluffy. Then just very gently add the dry ingredients. Hope that’s helpful 🙂

Do you know if they can be made without the sour cream? Does it affect the flavor? Could milk be used instead? This recipe looks yummy, I just don’t always have sour cream on hand.

Is the purpose of the sour cream to make it more like a buttermilk pancake? Would it affect the batter too much if left out?

can you leave out the sugar and the salt? Both are so bad for you, and I’m looking for a healthy recipe since the packaged stuff has GMOs.

I've tried the recipe and LOVE the taste…SO yummy. I like to halve the pancake mix recipe for my guys, since I usually don't have 8 cups flour, on hand. I've noticed the pacakes are pretty flat, so didn't know if I needed to make any other adjustments in the leavening ingredients when halving the mix recipe? Thahks!
