A few days ago I headed to Walmart to try out the Tex Mex Chicken Fajita Recipe Makers from Kraft. I have made the New England Pot Roast and was ready to experiment with a new flavor. Like, I said, I love Mexican food, so this was an easy choice.

Instead of making the fajita recipe on the box, I used the same ingredients to make a comforting, cheesy casserole! It has been so stinkin cold here, that a nice hot casserole sounded like the perfect meal.

You guys, this was so good! It only took a few minutes of prep time and 25 minuted in the oven and the result was fantastic! I love when you can make a delicious, well balanced meal out of just a handful of simple ingredients in a small amount of time. It sure makes dinnertime more pleasant! Easy Chicken Fajita Casserole

Serves 6
Prep time 15 minutes
Cook time 25 minutes
Total time 40 minutes
Wondering what to make for dinner? This Easy Chicken Fajita Casserole bakes up fast for a delicious, well balanced, comforting meal that everyone will love!


  • 2 cups boneless skinless chicken breasts (cubed)
  • 1 Small onion
  • 1 Small green pepper
  • 1 box Tex-Mex Chicken Fajita Kraft Recipe Makers
  • 6 Medium soft flour tortillas (chopped)
  • 2 cups shredded cheese (I used Mexican Blend)


Step 1
In a large skillet cook the chicken, onion, and pepper in the simmer sauce provided in the Tex Mex Chicken Fajita kit.
Step 2
Prepare a 8" baking dish with non stick cooking spray and cover the bottom of the pan with 1/2 of the cut up tortillas. Spread 1/2 of the chicken mixture on the tortillas, and top with 1/2 the salsa provided in the kit. Sprinkle with 1 cup of cheese. Repeat layers one more time.
Step 3
Cover with foil and bake at 375 for 25 minutes.

    Is there an alternative product(s) I can use for the Recipe Makers? I know this is the key ingredient for this dish, but I’ve call ALL the stores in my area and no one sells this. I REALLY want to make this. :(

      Nikki, I would just add 1 tsp cumin, 1 TBS chili powder, 1 1/2 tsp garlic powder, and 1 1/2 tsp onion powder. And add salt to taste. Or just add a packet of fajita seasoning if you prefer. If it seems a bit dry just add in some olive oil. Hope you give it a try. We love this!

    I have looked at Shop n Save and Schnucks both for the Kraft Recipe Maker kits and cannot find them and I’ve asked and they have no idea what I’m talking about. Where did u happen to find yours?

    Stephanie. The chicken fajita casserole looks so good. I do not see where you have tomatoes or onions in the ingredient list, however the picture looks like it has these ingredients. Thanks for your help. Jane

    The Kraft recipe makers have been discontinued. Can it be made with fajita mix and salsa in place of the kraft?
