The Best Ever Lemon Bars

My recipe for The Best Ever Lemon Bars is super easy and perfect for lemon lovers! Cool lemon filling on top of a dreamy, buttery crust!

Crust
- 3/4 cup unsalted butter cold and cubed
- 1/3 cup powdered sugar
- 1 1/4 cup all purpose flour
- 1/4 tsp salt
Filling
- 5 eggs
- 1 3/4 cup granulated sugar
- 2/3 cup fresh squeezed lemon juice
- 6 tbsp all purpose flour
- 1 1/2 tsp baking powder
Topping
- zest of one lemon
- powdered sugar
Crust
Preheat oven to 350
In a medium bowl add butter, flour, and powdered sugar.
Use a pastry cutter or fork to cut the butter into the flour and sugar until crumbly dough starts to form.
Press the mixture into a greased 9x13" pan. Bake for 12 minutes.
Filling
In a large bowl beat the eggs with lemon juice and sugar.
Add the flour and baking powder and whisk together well.
Pour into baked crust and bake for 20 minutes or until edges just start to brown.
Let cool to room temperature then add the zest of a lemon and a sprinkling of powdered sugar over the top of the bars.
Cover and chill in refrigerator for at least 2 hours before serving.
