Chocolate Peppermint M and M Cookies

These soft, thick, and chewy Chocolate Peppermint M and M Cookies are the perfect easy christmas cookie recipe! The green and red make them extra festive!

1 cup unsalted butter softened 2 Tbsp oil I like avocado oil 3/4 cup cocoa powder 1/2 cup brown sugar 1 cup granulated sugar 1 tsp peppermint extract 2 eggs 1/2 tsp salt 1/2 tsp baking soda 1 Tbsp cornstarch 1/2 tsp baking powder 2 1/2 cup all purpose flour 1 cup semi sweet chocolate chips 1 cup chocolate mints chopped 1 cup M&M's
In a mixing bowl, cream the butter, oil, cocoa, and sugars.
Add peppermint, eggs, and salt and mix well.
Add cornstarch, baking soda, and baking powder, and mix.
Add flour and mix just until combined.
Stir in chips and candy.
Preheat oven to 350
Drop dough by rounded tablespoons onto an ungreased cookie sheet 2" apart.
Bake 8-10 minutes.
Let cool on sheet a few minutes before transferring to a wire rack to cool completely.
Store in an airtight container.
