I have not been sharing many cupcake recipes with you. Shame on me.
I hope these will keep you from holding that against me.
I made these last week and they were gone in a few days. We (read:2 people) didn’t share them either. So, yeah, they were good. I mean, they’re peanut butter and chocolate cupcakes so what do you expect?
The above picture was how I intended these cupcakes to be: Rich, moist, fluffy chocolate cake topped with creamy dreamy peanut butter frosting, garnished with a peanut butter cup. But they look a little naked, yes?
Turns out they were asking for a drizzle of chocolate. Just to put them over the top.
You can’t get a better flavor combination than chocolate and peanut butter and you wont find an easier recipe. These are completely from scratch but they are so easy you have no excuse to use a mix. I mean all you do is dump everything in the bowl at once and mix. Easy peasy. And it’s the best chocolate cake I’ve ever had. And I have made A LOT.

Ultimate Peanut Putter and Chocolate Cupcakes

Ingredients
For the Cupcakes
- 1 3/4 cup flour
- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 cup soft butter
- 2 eggs
- 1tsp vanilla
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/3 cup buttermilk
- 3 oz melted unsweetened baking chocolate
For the Frosting
- 1/2 cup soft butter
- 1 cup peanut butter
- 3 cups powdered sugar
- 2-3 Tbs milk
Preheat oven to 350*
Mix all cake ingredients in a mixer on low for 30 seconds. mix on high for 3 minutes. Pour batter into prepared muffin tins 2/3 of the way full. Bake for 13-15 min or until toothpick inserted comes out clean. Let cool before frosting.
Beat butter and peanut butter until smooth and creamy. Add sugar and beat well. Add milk 1 Tbs at a time until desired consistency. Spread or pipe onto cooled cupcakes. If desired garnish with peanut butter cups and a drizzle of chocolate syrup. Store covered in the refrigerator.
