White Chocolate Cinnamon Tea Muffins

White Chocolate Cinnamon Tea Muffins

Glazed White Chocolate Cinnamon Tea Muffins are perfect for your breakfast, snack, or brunch menu! They are light, sweet, and full of warm cinnamon spice!

Ingredients

Muffins

  • 1 3/4 cup all purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 5 tablespoons butter (softened)
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/2 cup strong brewed cinnamon tea (Bigelow)
  • 1/3 cup plain greek yogurt
  • 3/4 cups white chocolate chips

Glaze

  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 2-3 tablespoons strong brewed cinnamon tea

Directions

Muffins
Step 1
Preheat oven to 350
In a medium bowl sift together the flour, baking powder, salt, and cinnamon. Set aside.
Step 2
In a mixing bowl, cream together butter and sugar. Add the egg and yogurt and mix well. Add half of the tea and mix, then add half of the flour mixture and mix until combined. Add remaining tea and flour mixture and mix just until combined. Stir in white chocolate chips.
Spoon the batter evenly into greased mini muffin tins 3/4 full - makes about 24. Bake for 9 minutes. Remove from tins after a few minutes and let cool.
Glaze
Step 3
Whisk together powdered sugar, cinnamon and 2 TBS tea. If too thick add a bit more tea until desired consistency is reached. Dunk the tops of each muffin into the glaze. Once the glaze sets, store in sealed container.
