Ingredients
- 1 1/2 cup all purpose flour
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 3/4 teaspoons baking soda
- 1/4 teaspoon baking powder
- 2/3 cups oil
- 1 1/4 cup sugar
- 2 teaspoons vanilla
- 2 eggs
- 1 1/2 cup chopped apples (peeled and cored)
Topping
- 3 tablespoons brown sugar
- 1/2 teaspoon cinnamon
Glaze
- 3/4 cups powdered sugar
- 1/4 teaspoon cinnamon
- 2 teaspoons water

Preheat oven to 325 In a bowl whisk together flour, cinnamon, salt, baking soda, and baking powder. Set aside. | |

In a mixing bowl add oil, sugar, vanilla, and eggs and mix well. Slowly add flour mixture and mix until well combined. Stir in apples. | |

Pour batter into a greased 9x5x3" loaf pan. In a small bowl stir together brown sugar and cinnamon and sprinkle over batter. Bake about 60 minutes or until tester inserted into the center of the loaf comes out clean. Allow to cool 20 minutes in the pan before removing to cool on a wire rack. | |
