This hearty southwest soup is full of flavor and is so simple to make in the crock pot. No one would ever guess it's a skinny recipe, too!

Ingredients

  • 28oz canned crushed tomatoes
  • 28oz chicken stock
  • 2 boneless skinless chicken breasts
  • 1 can corn
  • 1 Medium onion (chopped)
  • 3 cloves garlic (chopped)
  • salt (to taste)
  • 1 heaped tablespoon chili powder
  • 2 teaspoons cumin

garnish

  • light sour cream (optional)
  • low fat shredded cheese (optional)

Directions

Step 1
Add everything to the crock pot and cover with the lid. Cook on high 4 hours or low 6-8 hours. Shred chicken and stir everything together. Garnish with a touch of sour cream and cheese if desired. Enjoy!
